
In the same spirit that Beaujolais Nouveau is announced – Parisian poissonneries proudly debuted their Coquilles St. Jacques from either Normandy or Brittany yesterday for the official launch of scallop season – some even added the announcement to their facebook page! Did you know that this seasonal bi-valve mollusc sports a roe that indicates the “sex” of the scallop? The female roe is the one to beat, er, eat for its brightly orange or red-colored roe, whereas a male’s roe is white. Although restaurants will serve many recipe variations, the classic beurre blanc or beurre noisette (brown butter that has a hazelnut color) are simple and delicious.
