Opening Soon: Bistro Albion


Chef Matt Ong and bartender Hayden Clout have left Fish la Boissonnerie after ten great years to open their own place in the 10th – a French gastro pub bottle shop concept named Albion. Great choice in location too as this area is hot right now; Albion is just steps away from Vivant, L’Office and Autour d’un Verre.

They’ve been burning the midnight oil with serious elbow grease to change the old Au Granvillais from dated pink Formica table tops into a modern urban eatery with polished hard wood floors, soft lighting and open kitchen overlooking the large space

Even the bathroom door has a playful element – which I’ll leave for you to discover – but bien sur, it involves a wine bottle with a mind of its own.

Since Matt and Hayden have proven experience with solid cooking and small production wines – they’ve got every chance of making a name for themselves once the doors are open in a few weeks.

Speaking of Fish la Boissonnerie, they are adding a new restaurant to their repertoire in the 6th called “Semilla”, also coming soon.
